Waterfront and The Oyster Bar Add Local Flavor to World-Class Dining at Encore Boston Harbor Resort

New venues to offer local oysters along with beers and ciders crafted exclusively in New England
EVERETT, MA (MAY 16, 2019)— Encore Boston Harbor today shared details on two new dining options at the $2.6 billion, five-star resort set to open this summer. Waterfront, featuring beers and spirits crafted exclusively in New England, and The Oyster Bar, focused on local seafood, are the two latest additions to Encore Boston Harbor’s 15 dining and lounge venues. 
The restaurants are located adjacent to each other in the north esplanade just off the Garden Lobby. Waterfront’s focus on regional beverages reflects the booming craft beer and spirits scene in New England, while The Oyster Bar features an abundance of world-renowned seafood found along the region’s seacoast. Both kitchens will be helmed by Boston Chef John Ross, formerly of Neptune Oyster in Boston’s North End. Widely known for creating one of the best lobster rolls in the city, Chef Ross developed the menus for both restaurants with an emphasis on shared plates, as well as food and beverage pairings.

About The Oyster Bar
Upon entering The Oyster Bar, guests will immediately be drawn to the intimate dining counter which features three separate interactive oyster stations with displays of raw seafood over ice. Skilled shuckers will handmake platters, choosing from a selection of the best New England seafood from up and down the region’s coastline and north into Canada. 
The restaurant’s selection of oysters and other raw items will rotate seasonally, but guests can expect Duxbury Harbor, Plymouth Bay, Barnstable Harbor and Maine oysters to be menu staples. In addition to oysters and raw bar items, Chef Ross has prepared a menu of chowder, ceviches, crudos, toasts and a trio of mini lobster rolls served with tomato chips and brown butter mayo. Beverage selections allow classic pairings with crisp white wines, champagne, as well as local craft beers. 
About Waterfront 
Waterfront will feature 32 drafts and more than 40 beers and ciders in total. Sourced exclusively from New England, a wide array of styles will be represented from local partners including Night Shift Brewing in Everett, MA, Lord Hobo in Woburn, MA and Clown Shoes in Boston. The selection also embraces the entire New England craft beverage movement with cider from Shacksbury in Shoreham, VT, a session IPA from Stony Creek in Branford, CT and a brown ale from Smuttynose in Hampton, NH. 
The spirits program follows suit with exclusive partnerships and a distinct lean towards local distilleries. With a seating capacity of 80, including 27 spots at the bar, Waterfront showcases hand-crafted floor tiles, a barrel-vaulted ceiling with antique brick and an Églomisé back-painted glass centerpiece depicting historic Boston Harbor. Menu highlights include BBQ pork rinds, littleneck clams, steak tartar, fried oysters and Chef Ross’s newest signature lobster roll complete with avocado, crisp bacon and a smoked tomato aioli.

Low-profile European-style boats will be used to sail back and forth without the need to raise area drawbridges. Encore Boston Harbor is expected to open in June 2019.
